Ingredients: light rum, mint, lime, sugar syrup.
Put a good clump of mint in an old-fashioned glass along with a third of a jigger of sugar syrup. Crush or muddle the mint with a muddler or wooden spoon. Cut a lime into quarters and squeeze all four of them into the glass, dropping in two of the hulls. Add a shot of light rum, fill with ice, and stir.
Most recipes call for a garnish of mint, but because the drink is already filled with a flurry of mint, I consider this overkill. In New York City, mojitos are invariably made with Bacardi Limon, a lemon-flavored rum.
